Grilled Kooperey

Here is the back story to this post. I was on my first overseas visit ever to Pakistan to see family. Actually Pathan AKA Pashtun people love to cut and eat lamb even if it isn’t Eid. Lamb is the most favorite protein of choice in this part of the world.
On one such occasion one of my brother in laws who happened to be married to my nunth which means husband’s sister in Urdu. So he was Mr. Riaz’s bahnnoi which means sister’s husband. He cut lamb that day and at that time they had 3 kids, 1 son and 2 daughters.
I arrived to their house with my mother in law and he came out with a huge skewer of meat. This was very milky white like in the picture up there and he gave me a piece and I ate it and enjoyed it. Then he looked at my nephew and told him that it was good for him.
Then it dawned on me and I told Mr. Riaz years later after and I said I am going to buy this and cook it. So I did. I made the curry from the first post of Kooperey which happen to be testicles of a lamb, goat or cow, I used 1 but you can use 2 or more depending on how many people you are going to feed.
First of all you have to remove the membrane sack from them and wash them in cold water until they are clear and there is no milky residue on them. The membrane sack gets thrown in to the garbage after you wrap it up very good so it doesn’t stink later. Preferably you can throw it outside in the garbage, With the cleaned kooperey you can cut them in to small bite sized pieces.
Add 1 pinch of either pink salt, kosher salt or sea salt, 1 capful of either lemon or lime juice. Mix and place on skewers if you are using a grill after you place 1 sheet of aluminum foil on the grill and spray with cooking spray or spray a stovetop grill pan and cook for 10 minutes and keep turning until you see grill marks. If you are using the gas or electric grill cook the kooperey on number 6 while on stovetop grill pan it is on high heat or medium high for same amount of time.
Serve with chutney and chapati. Also make sure you salad available too. Drinks that goes with this is lasi.
