The Many Ways To Make Great Lasagna

I will tell you the truth about myself about what I like and dislike even right down to my food. Ok, my grandfather said he was very picky about his eats. At a couple of times in my life I didn’t eat meat and one of those occasions is when I was in high school. The old man got pissed off at me and ask how come I wasn’t eating. Ok Germans for the most are carnivores.
Ok I am an omnivore and there are times I get sick of eating meat and I want vegetables and fish mostly. I am still like that even that I will openly salivate over oxtails or a cow’s tongue. Fish is and always will be my first love. I also love rice and pasta.
You can either make your own pasta sheets like I did by adding 8 handfuls of all purpose unbleached like I do and making a well in the center then crack and add one egg, add 3 pinches of nido. and use 1/4 cup of water and using it a little at a time and working it in to a stiff dough. Add 2 tbs of olive oil and knead that in to the dough and let it rest for 20 minutes in a covered bowl.
I have a pasta maker that is manual that has a crank. This can be easily seen on my facebook and instagram profiles. At this time you can make the sauce by adding a regular meat sauce consisting of 1 lb or 1 kilo of ground meet such as beef, or chicken, or turkey, or veal, or lamb. There are an array of vegetables you can use too for the sauce depending on what your tastes are. I used 1 large eggplant cut in tiny pieces in this picture. 2 zucchinis, 1 container of mushrooms, 1 bell pepper of any color can be used and also 1 onion of any color except the long green ones. For the sauce chop 1 onion and add it to the pot that has 4 tbs of olive oil and fry until golden.Add 1 pinch of seasoned salt. Add 3 cloves of garlic mashed. Add 1 pinch of pepper corns ground in my mortar and pestle. Add 2 bay leaves, 3 dashes of balsamic vinegar, 1 pinch each of spices each of basil, oregano, rosemary, thyme, marjoram and red chili flakes. 1 pinch of sage is optional.Add the type of vegetables that you prefer and cook until it gets tender. Add 1 can of tomato paste and 1 liter or 1 quart of water. Add your choice of veggies if you are a vegatarian or if you are a meat eater follow the directions to the vegetarian sauce add only one of the types of meats that you prefer. Cook and let the sauce thicken on low heat. .If you want both then add both ground beef to pot after you add onion and garlic plus the herbs, seasoned salt and crushed black pepper cooking the vegetables until tender then the tomato paste and water and let it cook until you have a thick sauce. Add 1 pinch of cinnamon and stir, Now it is time to turn the burner off.
Set oven temp to 375 Fahrenheit or 190 Celsius to preheat and get a roasting pan out and oil it with olive oil by adding 3 tbs then spreading it everywhere.
Now it is time to make pasta sheets by screwing in the pasta machine on to the table. It has a vice grip and attach the handle. Don’t add the other piece we are not using it to make spaghetti or linguini so please put that up there is no need for that now.
Take one tiny piece of dough it is like a small Persian lime size and flatten it and dredge it in flour and make sheets first with the first setting fold and run it though 4 more times. and when done add that to the roasting pan until you get the first lair done. Add a thin lair of sauce and great some mozzerella and provolone cheeses.
Add 1 lair of roccota cheese Add a sprinkle of grated Mozzarella, Romano, Parmesan and Provolone cheeses. You need a tiny bit and keep repeating until you have your lairs of sheets of pasta,sauce and cheese in a stack in a roasting pan.
If you use store bought lasagna, boil in a stock pot 1 gallon or 4 liters of water and add 1 tsp of olive oil and a pinch of pink salt and bring it to a rapid boil and cook the store bought lasagna according to the directions on the box and drain it in to a colander in the sink and rinse it with cold water. then proceed to make lasagna and skip the fresh pasta sheets recipe if using store bought.
When your lasagna is ready for the oven, bake covered for 15 minutes then open the lid to see if the cheese is melting, gooey and bubbly, place it back in the oven for another 10 minutes uncovered.
You can also skip all of this above and use frozen spinach for spinach lasagna.
