This is one of my favorite salads of all times. Also it is very healthy and it is easy to make. This is the Lebanese version. The Turkish has theirs too but it is a little different. I have pins for both in Pinterest but this tabouleh recipe is solely my recipe.
It is great for the type of hot weather that we are having right now and it is very refreshing.
I soaked 1 cup of bulgur or known as cracked wheat in 1 quart or 1 liter of water for 2 hours. The bulgur is nice and plump at this time and needs to be drained. I took a sieve and drained the water from the bulgur. After draining all of the water from the bulgur, I put the drained bulgur back in the bowl.
I added 2 small cucumbers or 1 large cucumbers that I have washed and chopped. I chopped 1 small onion and 1 roma tomato and added it to the bulgur mixture and stirred. I added 3 large pinches each of pasley and mint. The mint can be either fresh or dried. I added 1/4 cup each of lemon juice and olive oil followed by 4 tsp of balsamic or grape vinegar. I mixed to combine and it is ready for consumption.
