Eggplants With Pomegranate Molasses

I wanted to do my own recipe on eggplant with pomegranate molasses and here is my take on it. I hope you like it.
You can use either 1 big eggplant, 2 baby eggplants or 6 small Indian eggplants for this dish. I used the Indian eggplants. I added 1/4 cup of olive oil to the pot and added the sliced eggplants I had used for this dish. I cooked the eggplants in the oil. I removed the eggplants from the oil when they were soft. I added 1 onion or shallot sliced in half moon slices, 3 cloves of garlic chopped and cooked it until it was slightly brown. I chopped 1 tomato and added it and cooked until it was mushy then readded the fried eggplant.
I added 3 dashes each of maggi or knorr aroma and balsamic vinegar, 1 bullion cube crushed, 1 pinch each of turmeric, red chili powder and paprika, 1 drop each of pomegrante molasses and pomegranate sauce. These are sold at stores that sell Middle Eastern groceries. I stirred on low heat for 5 minutes then added 1 pinch of parsley. I shut off my burner and covered the pot.
This can be eaten with pita bread or chapati. Enjoy!!!!!!
