Actually I got this Idea from my jatani. In Urdu it means the wife of husband’s eldest brother. She told me about the gorda tika. Gorda tika means pieces of kidney on a seekh which is a skewer. She also said salt is added but I went a step further and added what I wanted to this.
First clean the kidneys and it can be up to 10 kidneys if you wish and depending on how many people are eating with you. First you cut around the white part of the kidneys and then when they are all cut up then take 4 tbs of kosher salt in a bowl full of water and wash them thoroughly to cleanse the blood and excess garbage out of the kidneys followed by 2 tsps of white vinegar and wash some more and this is put in a sieve to make sure the excess water isn’t remaining.
Here you can add 1 tsp of any type of cooking oil of choice, 1 pinch of any type of salt or even bullion powder, any type of black peppercorns, uziza seeds or kabab chini crushed in a mortar and pestle, 3 dashes of maggi or knorr aroma and remember you can only use one such as I used red palm oil for my oil of choice, green peppercorns and carolina reeper pepper infused sea salt as my seasoning choices.
Then again It depends on what you have available in your kitchen. Add to the skewer and either grill on a grill for 15 to 20 minutes and turn occationaly or there is this gizmo that is like a stand that is placed in the inner lining in my instant pot. I have an 8 quart and it fits perfectly. The tiny skewers fits on this stand that this tiny skewer set for instant pot I bought from Amazon. I put 3 to 4 pieces of kidney on. each one and turned it on to air fry at 375 for 15 minutes and this is no turning here required.
The juice that is left behind can be used for various dishes including the next one coming up. Also you can fry the kidneys on the stove too on medium heat for 20 minutes or until done if you do not have a grill or even an instant pot.
I chose to air fry but you can broil bake or even roast these too,Here you juar use your judgement,
this is super yummy and i am super amazed
