Doro Dabo Ethiopian Chicken bread

As you can see I made a total of 3 and I made it in my instant pot because I did not feel like dragging all of my pots and pans out of my oven. I have a set of cast iron skillets from extremely big to tiny and the tiny one I use for cooking eggs for myself in the morning if I want one or two lol. This can easily fit in my largest cast iron skilllet if I chose to with ease and all of it would have fit in there. Yo, I do not want to get ahead of myself and you think I am trying to confuse you but seriously this is not my intention. I even told Mr. Riaz bring me some whole chicken and chicken breasts this weekend.
You will need to make this of course> Doro Wot Ethiopia’s Chicken Stew. I thought I had taken down the chicken breasts for this because it is boneless but I ended up taking some of the chicken that had the bones in it instead. However it is totally up to you what you want to do. Click the link above and use the boneless chicken breast in place of the chicken that is on the bones and has still skin intact. Any which way you will have a very flavorful bread because of the spices, chicken and eggs that is used, Have you noticed how much I love quail eggs???? The yolk is so nice and creamy and the quail egg is a lot smaller then a chicken egg and they really are extremly tasty. I love chicken eggs too, just do not get me wrong here.
The rest is how to make a yeast dough by adding to the sifter 1 cup each of all purpose unbleached flour and whole wheat flour, 3 pinches of rapid rise yeast If you are using it from a bag or a jar or you can simply use 1 packet and 3 pinches of baking powder. 1 pinch each of xanthen gum, turbidano sugar, either 1 pinch of pink salt, kosher salt or plain sea salt. Add 1 handful of powdered milk. The turbidano sugar and whichever kind of salt you choose to use just goes in to the bowl because it may be too coarse to go through the sifter. The rest can go through the sifter with no problems. Sift the contents of the sifter in to the bowl then add 1/4 cup of water a little at a time to make a dough. Knead until the dough is made then add either oil or ghee.
Add 1 oz of either olive oil, grapeseed oil, peanut oil, sunflower oil, avocado oil, safflower oil, hazelnut oil, almond oil, hemp oil, walnut oil, macadamia nut oil, flax seed oil, walnut oil, vegetable oil, canola oil or corn oil. You can even add 3 tbs of butter ghee in its place if you wish. I chose oilve oil out of this list because that is what I used while making the chicken stew and spicy butter thart is apart of the stew itself before I even made this dough. I did not want to take a chance on having the flavors clashing. After You add either oil or ghee knead some more then place the top over the lid of a large mixing bowl if there is a top that goes with it or place cling film on the top and pop it in a warm place like inside the microwave and select the cooking timer mode and the time should be 30 minutes.
When the dough is finished proofing then add the now cooled doro wot meaning chicken stew to the dough and mix with with a large wooden spoon. Take a piece of parchment paper and ball it up and place it in the utensils that is compatible with an instant pot or other multi functional cooker. I have the instant pot duo crisp 8 quart. and as you can tell I needed 3 pieces of parchment paper for this doro dabo meaning chicken bread. Spray with cooking spray. If using an oven then you will need 1 and a large cast iron skillet or baking utensil that is big enough to bake a sheet cake in. Preheat for 400F or 200C or cook in instant pot by selecting bake the temp should be at 400F, select time for 15 minutes and press start after placing the air fry lid on top of the multi functional cooker. The time should be counting down.
In the oven set for 15 minutes and then when the timer beeps telling you it is done check on it and shut the timer off. Instant pots will shut off automatically unless you are steaming something. That will be the only way you will need an external timer. Check the chicken bread to see if it was done and if the knife, fork or toothpick comes out clean then forget and turn the oven off if using the oven. If not then repeat for another 15 minutes, The bigger bread in instant pot took 30 minutes total because I cooked it for 15 minutes and it did not pass the test to see if it is done then I had to cook it for an additional 15 minutes. The two smaller ones was exactly 15 minutes. Also I love making this and it is a favorite here at my house. Enjoy it with shiro which is a stew made from besan otherwise chickpea flour and of course coffee.
