Khubz

Before you can ask me what does khubz mean I will tell you in Arabic it means bread. Keep in mind my Arabic is limited but I want to learn more. This can be easily mistaken for Turkish pide which is from one of my previous posts that I had covered. My pide is not eggless though but This one is.

Add 3 pinches of yeast if using it from a bag or a jar or a sachet of yeast from a packet to a bowl. add 1 pinch of turbidano sugar and 1/4 cup of water at room temperture. Set aside so it can activate. In a large mixing bowl add 1 cup each of all purpose unbleached flour and whole wheat flour, to a sifter along with 3 pinches of baking powder and sift. Add 1 handful of powdered milk and 3 tbs of plain yogurt or the dried yogurt powder from Hoosher Hill Farm. You can buy this on Amazon. Add 1 pinch of either kosher salt, sea salt or even pink salt then add the yeast mix in to the flour mixture. Knead as you go to make a nice dough.

When the dough is made then add 1 oz of either grapeseed oil or olive oil and knead some more for another couple of minutes then cover the bowl and let sit for 30 minutes. Punch the dough and repeat. Have oven on 400F or 200C. Take a baking sheet and place either parchment paper or silpat on it and break off the dough in to at least 6 pieces and form in to a ball and shape until it is slightly flat and sore it by marking it across and then up and down by using a butter knife and do not cut through the bread it must look just like the picture from above. Sprinkle with a pinch of either poppy seeds, kalounji which are the black seeds or white and or black sesame seeds. Place in oven for 12 minutes or use Instant Pot and place either parchment paper or silpat in the air fryer basket place the lid on top and select bake, select 12 minutes, select 400F and start.

The Instant pot can also be used for metric celsius aka centigrade by holding the +temp button for a couple of seconds and you hear a beep then you see a C meaning celsius and tap one more time to change back to F meaning fahrenheit. This Khubz you can serve with your favorite soups and tagine dishes as well and also goes well with your morning eggs and coffee.
