Homemade Pita

Hey folks I am up late as usual because of some stupid family drama coming this time from my mother’s side of my family. I already know how extremely toxic they are from what my mother told me and I really have my gut full of their bs. Before I write this recipe I just wanted to address the elephant in the room which is what is going on in my so called family. It is the family that I have been born in to and I really want them since they are being rotten with me that they do a dna test through 23andme. This is where I did my dna test.
My doctor and her son are also in to geneology which is really amazing. My test shows I am mostly French and German some Italian with a little bit of Ashkanazi Jewish and Leventine. I recently looked and it said Cypriot too. I wish this interloper by the name of Michael Hoster did not call me with his false claims that his mother is the same woman that had me and gave him up for adoption. I made him send me a document showing proof and obviously there is correction fluid used on this false document he sent and my mother’s signature isn’t on it.
Actually a dna related cousin that I met after taking my test told me have them take a dna test. Also My doctor agrees too. Besides dna never lies and documents can always be falsified and even the seal of certian places can be counterfited. I do not care what anyone says that every legal document has to have a signature. My mother’s signature is on my birth certificate and mine are on my daughters. I have two by the way. There is a long standing joke between my youngest daughter and me that I should have. been a doctor with my terrible writting and it is the truth. She told me it is vertually imposible to forge my signature.
Oh and I wish my mother was here with me because this was her most favorite bread. I am sure if she was still here instead of a grave down the street from my old high school she would love to eat this steamy bread coming right out of my oven or Instant Pot. So we are going to tackle 3 methods and on stovetop too. Here it goes which first you preheat the oven to 400F or 200C. Instant Pot and stovetop no worries.
Add 1 cup each of all purpose unbleached flour and whole wheat flour and sift to make the flour light and lump free. Add 1 pinch of either pink salt, kosher salt or sea salt, turbidano sugar 2 pinches each of yeast if using from a bag or jar and baking powder. If you have one sachet of yeast then add this to the flour mixture and add 1/4 cup of water a little at a time to make a stiff dough. Add 1oz of either grapeseed or olive oil and knead again. This is done in a large mixing bowl and mine came with a lid. If not add 1 sheet of plastic cling wrap over the bowl and let it sit in the warm part of your kitchen. Let it rise for 30 minutes and come and punch the dough down and repeat for another 30.
Make a round ball of dough and roll it out in a nearly flat circle. Look at the above image for guidence. Grab a baking sheet and place some parchment paper or silpat on top of it then place the uncooked raw pita on top of that and place it in the oven for 5 minutes. For stovetop heat up the tawa (griddle) until it gets hot and no need for additional oil. Flip the pita over after 20 second intervals until it is done. Do not move away from the stove if using stovetop method. Doing so can cause it to burn. For Instant Pot method use the baking utinsels that came with this that is round and place either silpat or even parchment paper in there too as well or you can use the air fry basket as well. If you want to use the baking utinsels otherwise pot in pot method use a trivet to place this on. It comes with your cooker. Attach the air fry lid select bake and the temp 400 and the time 5 minutes also. Take fork to see if done if not then cook again for another 2 minutes.
Serve with hummus, ful, baba ghanouj, molokhaia and other soups. Also excelent for making fatoush which I covered in an erlier post along with zatar. Also you can use olive oil or butter ghee and add a pinch of Zatar and toast it in the oven for a couple of minutes and consume it with either tea, coffee, or lassi which is the Urdu name for a yogurt drink. It is also called leban in Arabic and Ayran in turkish. Enjoy!!!!
