Chawal Ki Roti (Rice Bread)

Again I have been combing archives in onedrive, snapfish and shutterfly I used to use photobucket but it was ok once then they changed. It is absolute crap now to store my backup photos. And yes before I started blogging about food I posted photos of my dishes that I tried out on Facebook and Instagram and I was asked for recipes. So I turned both of my favorite hobbies in to my blog. Here I am and the rest is history. There are over 800 yummy recipes on this blog and counting.
First of all cook some rice > Plain Jasmine Rice Etc. using this post here.< Use a 1/4 of a cup of this cooked rice and make sure you use the white rice only because it is going to help hold its shape. Add 1 cup of rice flour, 1 pinch of xantan gum, 2 curry leaves crumbled, 1 pinc either pink salt, plain sea salt or kosher salt, 1 pinch of cumin seeds ground in mortar and pestle, 2 tbs of plain yogurt or use Hoosier Hill Farm dried yogurt powder. You can buy this yogurt powder from Amazon and probably Walmart.
MInce 1 green chili, 1 clove of garlic and a small piece of ginger peeled and washed. Add 1 oz of water a little at a time to make a firm dough. In between 2 sheets of oiled wax paper take golfball sized pieces of dough and roll with a rolling pen or if this doesn’t work then shape until flat using hands coated with oil so it isn’t sticky and the dough shouldn’t be sticky at all. On a very hot tawa or cast iron skillet on high heat add either 1 tsp of coconut oil, butter ghee, corn oil, vegetable oil or canola oil. Cook until brown on both sides and you may want to reduce the heat to medium. Repeat the process starting with oil then the flattened rice dough until the dough is completely used up.
This is perfect with eggs in the morning for breakfast or tea time if you want a snack along with kabab and chutney. I even love to eat this with achar.
