Quinoa With Beans And Mixed Vegetables

Here is a dish that will make everyone happy including vegetarians and vegans. All you have to do is make sofrito and Halal Pasteles With Arroz Gandoules post has the sorfrito recipe on this page. Turn on saute function in instant pot for 10 minutes and press start then make the softrito from this recipe then select cancel if it is finished before the time is up. Add 1 cup of beans and no lentils does not apply to this dish. The beans used are myocoba, any white bean, black bean, any type of red beans, pinto beans, lima beans, cranberry beans, adzuki beans or pink beans that has been washed. Add to this, 6 cups of water, 3 dashes of goya seasonador or adobo, 1 packet of seazon, 1 pinch of cumin and peppercorns ground in mortar and pestle then added to the beans. Add 1 bag of mixed vegetables only.
Place the pressure cook lid and place it in sealing position. Select pressure cook for 20 minutes. Tap quick release and check how much water there is in the beans then add 3 more cups if the beans are a little hard and repeat again then tap quick release once more to let the pressure escape and please do not forget that all important steam diverter. After the beans and mixed vegetabes are done cooking then you can add 1 1/2 cup of quinoa and select slow cook for 1 hour and start. Place the lid over the pot and keep checking every now and then after you stir while you are doing so until the quinoa sucks up all of this lovely bean and vegetable juice. Serve this with a perfered favrorite beverage of choice. Mine would be either coffee or goya malta light of course.
And you can serve it as a main dish with a can of fish that has oil in it like sardines or some other type of fish or as a side dish with pinchos or even anticucho which are hearts on a stick so enjoy,
