Quinoa With Chicken And Mixed Vegetables

Actually I wanted again to do something different and I stumbled again on an old photo to talk about from my archives. I know it can’t be jollof quinoa because I already have this post and it is red in color from the blended red pepper, red palm oil and tomato paste, this has none of it in there because if it did it would be red and this post will not come about. However I will give this a Latin flavor by adding first sofrito. Halal Pasteles With Arroz Gandoules, this is the link on the left. Please look on this page to make sofrito then you can add your 1 lb or 1 kg ot chicken. Also for a veriation you can add either turkey, lamb, goat, beef or even veal instead. Add 1 oz of olive oil, 3 dashes of either goya seanador or adobo, 1 packet of sazon, 1 pinch each of cumin seeds and peppercorns ground coarsely. Add 1 liter or 1 quart of water. Cook for 3 1/2 hours for chicken and the rest it is 4 hours.

This is done on either slow cook or pressure cook in an instant pot. If slow cooking it is 3 1/2 to 4 hours after you select slow cook and press the start button. Place aluminum foil of the thop of the cooker and weigh it down using a lid big enough for the cooker itself. I you want to pressure cook then go ahead and select pressure cook for 15 minutes for chicken and everything else it is 20 minutes. Place pressure cooking lid on cooker and set to sealing then select the time and start. Once this is done tap the quick release button if pressure cooking and add 1/2 if it is a large bag of mixed vegetables only or 1 small bag. Add 1 cup of quinoa and 4 more cups of water and select slow cook for 1 hour to cook the mixed veg and quinoa, If slow cooking no need to switch functions. Just add your mixed vegetables and quinoa and cook for an extra hour.. The quinoa will absorb all of the liquid.

Enjoy this with family and friends. Also if you want it more spicy that is what a bottle of hot sauce is for. I find it perfect to consume a strong cup of coffee after eating such a fine meal as this.
