Chicken Rasam

Actually I realize now there are more types of rasam then there is sambar. However as soon as I try other types of rasam Inshallah I will post it. This is my second rasam post but this one is from my archives. I have done a mixed rasam post before and this one is not for vegetarians or vegans.You will need 1 lb or 1 kg of chicken. Make sure it has the skin on it and is on bone. First of all for this you will need to sprinkle 1 pinch each of turmeric, red chili powder and masala ground in a mortar and pestle such as; black peppercorns, fennel seeds and cumin seeds ground in to a a coarse powder and spread all over the chicken.
Add 1 tbs of yogurt mixed with a pinch of cornstach all over the chicken. Make the rasam masala part only from my My Mixed Dal Rasam post and set this aside. Turn on the instant pot by selecting the sautè function for 5 minutes and add 1/4 cup of either corn, canola or vegetable oil. Add 3 curry leaves, 1 pinch each of hing, and pink salt. Add the freshly made rasam masala, 3 cloves of garlic, 1 onion or shallot cooked until it turns brown, 1 tomato until it becomes mushy, 1 pea sized piece of tamarind, then finally add the yogurt covered chicken and let it fry a little bit in the masala then if the instant pot doesn’t shut off then you can select cancel.
Add 7 cups of water. Stir and place the pressure cook lid on top of the cooker. Make sure it is on the sealing position. Select pressure cook for 20 minutes and start. After time is up the cooker shuts off. If the chicken still is is on the bone and not falling off then you can repeat the process for another 10 minutes. I have Sri Lankan friend that loves to eat rasam especilly with idli. It can be eaten over rice and with dosa too.
