Yellow Squash Raita

This was the final picture in facebook archives that I downloaded today where I can actually talk about and yes there are different types of raita too some with raw vegetables and others some that are cooked. This is one of the raw ones besides the cucumber and the mazano chili one I did. The mazano chili raita is my own recipe but this one involves only 1 Italian yellow squash which gets grated. No need for the food processor this one is knuckle shreader only recipe.
In a small mixing bowl take one yellow squash only and cut the ends off wash it off running it under cold water. Grate the yellow squash using the coarse part of the grater not the fine part. My grater is flat where I can put it in a drawer for storage while there are the box graters that you are used to seeing that can be placed in a cupboard or on the shelf in a pantry. My flat one does the job I need very well and believe it or not it has been with me for a very long time. I bought it from a dollar store here in chicago like I did my huge tray and rolling pen and it has been with me for give or take for about 3 years or so and still works great.
After this squash gets grated then take either 1 onion or shallot and do the same thing. When you are done add 1 pinch each of red chili powder and chat masala. Also if you do not want to add either onion or shallot that you can finely mince 3 green onions and use instead. Add 1/2 of plain Desi yogurt. I love this one because It is as creamy as it should be. Mix this little by little with 1/4 cup of water and you may not need so much but it is to loosen up the yogurt and make it more like soup. Top with either 1 pinch of either cilantro or mint and enjoy it with rice or other grain dishes.
