Actually when I made this that I used chikki atta to make the dough for these yummy treets and it is 2 cups of chiki atta with 1 pinch of pink salt. 3 pinches of baking powder, 1/4 cup of water a little at a time until the dough is made. This is a without any type of maida meaning white flour recipe. Chikki atta is nothing but wheat flour and you can find this type in many Indian and Pakistani grocery stores. Add 3 tbs of olive, grapeseed or sunflower oil on the dough and knead it for an additional 3 minutes. Set the dough aside covered and start on the filling.
For the filling you will need either 1 lb or 1 kg of either lamb, goat, beef chicken or turkey keema which means ground meat or mince. Place in a strainer and run under cold water to rinse it and then shake until the bloody water isn’t there anymore. You may have to repeat this at least 3 more times and add this to another bowl. To this add 1 pinch each of parsley, thyme, marjarom, sumac, basil, oregano then rosemary and Baharat Or Bokharat Seasoning whichis the only spice that is the only thing with the link posted that is of single use only. Mince 1 small onion or shallot, 3 cloves of garlic, 1 green chili and tomato. Add 1 bullion cube, or 3 pinches of bullion powder from a jar or vegtea seasoning or you can add 3 dashes of seasoned salt. Add 3 dashes of maggi or knorr aroma and 3 dashes of either balsamic vinegar or wine vinegar. Mix these together and add 1 handful of chikki atta to the keema to bind it and mix again then cover and sit in the refrigerator for 30 minutes.
Actually the wine vinegar doesn’t have any alcohol and also I want to tell you for those thart may get bent out of shape that vinegar really is old wine that went bad. Please do your research before you jump to conclutions and say it is haram. It is haram if it is still wine and the alcohol content is still present. Even with balsamic vinegar is made from grapes and for me this is a delious addition to add to lots of dishes. I simply can’t resist it. From you see on my posts about when I make a salad that I definately got to have my balsamic vinegar and olive oil which is my go to salad dressing of choice. It makes my tastebuds do a happy dance.
Now pull out a cookie tray and silpat or parchment paper. Silpat is economical and it saves trees and it is amazing. I bought mine from Amazon. I have 2 each of smalls, mediums and large ones too. Line a cookie sheet with the large one and the small ones can go inside the air fryer basket of the instant pot. I have duo crisp 8 quart but if you have another model other then the one I have then there are the air fry lids available. They are at Target, Walmart. Kohls, and Amazon. I do not recomend Ebay because some of the sellers are shady and I do not recomend them for this item but I have bought perfume oils from them though that is it.
Turn the oven on to 375F or 190C. Take the dough and make the pieces of golfball size and dunk your piece of dough in some chikki atta in a zip bag and shake it up to coat the dough and place it on a very large tray is what I use on a counter to keep it clean on a workspace in my kitchen to keep my counters clean. If you are lucky you can find great things in a dollar store and this is where I found mine. However if you have money to burn and money is no object to you then still check it out and you may get lucky and it really lasts too. Place this floured piece of dough on this huge tray and roll it out with a rolling pen until it is nice round and flat like chapati but wait it gets better.
Take the keema mixture and a make a small patty like a kebab and place it in the center. Now fold the dough all the way around this patty until you made your hawawshi. this neat round parcel to me is just like making kraut brot which is a German specialty. I made it just like my oma Jacobe ortherwise my daddi ma meaning my paternal grandma. Daddi means paternal grandmother in Urdu while nanni means the maternal. Once you get this round meat parcel made besure to seal it in the middle with your thumb and index finger and place each one on a silpat lined cookie sheet until you are out and or you can place it also in an instant pot in the silpat lined air fryer basket. For regular oven method bake for 20 minutes and or for instant pot place the hawawshi at 2 at a time and place the air fry lid, select bake, set temp for 376, set time for 20 minutes then start.
Also there is raw meat inside the dough and if it is still a little red inside after you prick it with your fork and also if it is a little doughy then you can bake it for an editional 10 minutes until it is done. For instant pot method you will have to repeat the process only that the time gets set for 10 minutes and select start. Great to have with tea or even coffee during Iftar during Ramadan or during tea time on regular periods durning the rest of the year.
