Genfo

Actually when I first tried this out I had a kitchen disaster. Yeah me and we have all had them at one time after another that I had a gluey mess all over the inside of my pot and I was really pissed off about it because It did not come out right like it did in the video I watched so I switched methods and was more successful. I first made Berebre and Niter Kibbeh before I even started.

There is a glass bowl I used even if I make fufu for Naija, Ghanian and Cameroonian dishes too. Also there are other West African countries that eats fufu as well. Making genfo which is Ethiopian is nearly similar almost. Take 1/4 cup of enset powder with equal amount of whole wheat flour. If you can’t find enset which is called false banana and It is available at places that sell grocieries from the eastern part of Africa. You can easily use then 1/2 cup of whole wheat flour instead and add just enough water in there until it is like a batter like consistancy, Spray the microwave safe glass bowl with cooking spray before you make the slurry and place it in the microwave uncovered for 1 minute. Stir again and make sure it is free from lumps and place back in to the microwave and repeat for another minute and then take out then let it cool. take and add it to a serving bowl and mix some more and make a hole in the middle add 1/2 of the contents from te mortar and pestle being the berebre In the middle and also same amount of the nitter kibbeh. You may put plain desi yogurt around the sides of the genfo itself,

You will have enough for another bowl too so repeat the steps you did for the first one minus the yogurt and cover and put in the refridgerator for later or give it to someone else in your house that may like this. If cold then heat it up in the microwave for 1 minute. You can enjoy this with coffee in the morning.
