Cacik Zucchini With Summer Vegetables And Turkish Tandoori Naan

Actually there are three different recipes on this page and the first one I am tackling is the cacik which is absolutly amazing and to my readers from the South Continent this is not raita even though it looks like it.
CACIK: For this you will need 1 cucumber diced, 2 cloves of garlic minced in one bowl and set this aside. In another bowl add 1/2 cup of plain Desi yogurt and beat until smooth. Add 3 tbs of water, 3 pinches of mint, 4 tbs of olive oil and mix and fold in the garlic and cucumber. This is perfect with the rest of these items on this post.
ZUCCHINI WITH SUMMER VEGETABLES: First thing first make ahead so you can have this fresh which is the link on the left, > Pepper Paste< this pepper paste is a lot fresher then the ones in the jar. I just seen some in Cermac but once it is open that I do not know how long it would be that I use it again so I do not want to throw my money away. The only way I can have the freshest pepper paste possible is making it myself. Grind 1 pinch of peppercorns in mortar and pestle and set this aside too. In a coldero on stovetop on high heat add 1/4 cup of either grapeseed oil or olive oil. Chop 2 zucchinis, 1 Italian yello squash, 1 bell pepper of any color or 5 mini sweet peppers. Mince 3 cloves of garlic.
Add 1 onion or shallot cut in to half moon slices and let fry in to the hot oil until golden, add the garlic and let it cook until the raw smell goes away. Add 3 pinches of vegtea seasoning or seasoned salt, the contents of the mortar and pestle, 1 pinch each of thyme, dill weed, parsley and paprika. Stir and add the red pepper paste, the prepped vegetables, 1 capfull of lemon juice. From here you can have it just as is after lowering the heat to low and cook for 20 minutes or until the vegetables are soft or add 1/2 cup of rinsed bulgar and 1 cup of water and cook on low for 20 minutes. Rice too is another option too and it would be 1 cup of rice that has been washed to make sure the starch is washed away to 3 cups of water. Let this boil on high heat then lower heat to cook for 20 minutes and and keep checking and folding over the vegetables in either the bulgar or rice. The choice is yours. When time is up then let this sit covered for another 20 minutes to catch all of the flavors.
TURKISH TANDOORI NAAN: This is only to be eaten with the cacik and the vegetables by themselves and it starts like this; Take 1 cup each of all purpose unbleached flour and whole wheat flour, 1 hanful of nido, 1 pinch each of mint. pink salt, turbindano sugar, 3 pinches of yeast, 2 pinches of baking powder, 1/4 cup of water a little at time until dough is made. After making the dough be sure to knead the dough for 2 minutes then add 3 tbs of either olive oil, sunflower oil or grapeseed oil. Add 3 tbs of butter ghee and knead for another 2 more minutes and cover the bowl and set in a warm place to rise for 30 minutes. Knead the dough again and let sit for another 30 minutes. Preheat oven for 375F or 190C. Bake in regular oven for 15 minutes. You may want to use the instant pot for doing this too by using an air fry lid at the bake setting. Just select bake for the the same amount of time it is for a regular oven, Just use a baking sheet for a regular oven or a round baking utinsils made just for instant pot. For both I suggest use silpat. If you are baking in an instant pot be sure you either use a trivet and place the instant pot compatable baking dish on it and the silpat and place the dough on it which should be thick and flat. It should not be chapati thin at all. For instant pot and the like place the air fry lid and select the time being the same time and temp as for a regular oven and press start and it will bake.
Also if you have a tawa and do not have access to a regular oven or instant pot or other multi functional cookers then make sure this tawa is on high heat and it is hot and place the round flattened piece of dough on top of this tawa. It is a griddle that is what it means in the Urdu language. You can use cooking spray if this makes you feel comfortable while using this method. Keep flipping it like a pancake every 20 seconds until it is done. Drink Turkish coffee or ayran with these dishes.
