Mashawa

Actually this is a very yummy dish if you are a bean lover and it is very comforting. This dish is from Afghanistan and I tried it out and came up with this picture in my archives and now I am going to write about it. Before starting add 1/2 cup of any type of red bean or adzuki beans, masoor ki dal and chickpeas in a bowl with a pinch of baking soda and enough water to cover the beans and let them soak for an hour or two. Add 1 pinch each of peppercorns and coriander seeds, 1 long or round red chili to grind in a mortar and pestle before we get started cooking.

In an instant pot on sautè function for 10 minutes add 1/4 cup of either canola or olive oil, 1 onion or shallot to caramelize, 3 cloves of garlic chopped. Add the contents of the mortar and pestle. Add either 1 bullion cube and crush it in the mortar and pestle before adding. You also can add 3 pinches of bullion powder or vegtea seasoning in its place. Add 3 dashes of maggi or knorr aroma, 1 pinch each of mint and dill weed.

Add 1 kg or 1 lb of either lamb, goat, veal, beef or chicken. Add 1 pinch of meat tenderizer by Shan. Drain and wash the beans several times so there will not be any traces of the baking soda residue in the beans and add to the cooker. Add 1 quart or 1 liter of water to the cooker. By the time this has been sautèing that the cooker should have shut off by then. If not press the cancel button to shut off the cooker anyway. Place the pressure cook lid on top of the cooker. Make sure the lid is on the sealing position. Select pressure cook on high for 30 minutes. Place the steam diverter on top of the steam vent and either leave it to release on its own or tap the quick release button to release the pressure.

After the pressure is gone and the button is lowered you can open the cooker safely and check to see if the meat and beans are tender. If so then you can skip the repeat but if not then repeat and then you can add 1 can of tomato paste and turn it on sautè function again to disolve the tomato paste and it turns in to a very yummy sauce. Serve this with naan and kawa or lassi would be your drink of choice with this amazing dish. As for me being a diabetic, I think this is just a meal by itself without the naan so enjoy it,
