Microwave Quinoa Moin Moin

I was looking at both Dutches O Kitchen’s and 9jafoodie’s blog one day on how to make this quinoa moin moin. These ladies are two of the many African bloggers I follow and every blog I had been to time and again has recipes that makes my mouth water.
As they say you tell the truth and shame the devil. This goes for every religion that is on this planet. Honesty is always the best policy and I have nothing to hide and otherwise there is no shame in my game. So far I have a never ending zeal to learn new things.
My love for reading Is endless and I want to give my readers something to enjoy and I can see myself making this again in the future because this is very enjoyalble and I was eating this with my jollof bulgur.
I took 5 handfuls of quinoa and washed and soaked it overnight then I used my immersion blender and blended the quinoa with 1/4 cup of water. I addded 1 red bell pepper, 1/2 shallot, you can use any onion of choice. I added 1 scotch bonnet with the seeds removed, you can also add habenero.I added 1 tomato, 2 cloves of garlic and was blending everything after I added stuff. I added 3 smoked dried shrimp, 1 pinch each of paprika, grated nutmeg, red chilli powder and crayfish, 1 bullion cube, 3 dashes of maggi or knorr aroma. I blended the batter a little more and added it to a bowl. I boiled 4 quail eggs and 1 piece of dried pollak. You can use 1 piece of aranka too. Aranka is a piece of dried smoked herring and I love it to pieces. I forgot to soak and soaking is recomended but I ended up boiling a pice instead to remove the excess salt. When the fish cooled I tore it to pieces and I got rid of the salty water.
The quail eggs I boiled was for 10 minutes cooking time and I drained, cracked and peeled them. I sliced it in to the glass bowl I have and it is microwave safe. I swear i would never again use glass in an oven. I had a mishap once where it actually broke because the oven temp was too high or something like that so please do not put glass anything in oven.
Allhumduallah I am fine and I am careful. I cut and added the remaining shallot and 2 sweet peppers. I also added 1 small dab of tomato paste and 1 tsp of palm oil to the batter and I was stirring around until it all blended and I added it to the microwave safe glass bowl with the yummy stuff inside I poured the batter and added the fish I shereaded and stirred again. If you want also you can use corned beef, tuna fish, canned salmon, sardines and even canned mackeral to this moin moin too. Oh also chicken eggs are used too but I chose quail eggs if using chicken eggs add 1 egg. Just slice the eggs and add them to the bowl that you are cooking the moin moin in.
The lovely bowl has a cover to go with it so it steems perfectly in microwave.
I cooked it for 2 minutes, let sit 2 minutes, microwave 2 minutes, microwave 3 minutes.
Microwave oven temps may vary so please check your moin moin. If your moin moin has goodies inside of it then it takes longer to get done and you can tell it is done like you can when you are backing a cake. When it is firm check with fork and toothpick to see if it came out clean, if it comes out clean it means it is done.
