Hey y’all I was really loving this dish last night and rightly so because it didn’t raise my glucose levels. I have eaten several handcut french fries that I air fried and it gave me like a sugar rush. That is how I had a spike in my sugar levels. I also asked a couple of African sisters I know what is the best type of African food to eat for a diabetic. The crazy thing is there isn’t much of a choice because the fufu is extremely high in carbs like my favorites such as pounded yam or even gari.
First thing is take your protien of choice and cook it before making this dish or if you have plain like I did because It was a side dish to my kidney tika that I had just published. Even if you are going to make other things like scotch eggs or even suya that dish would be perfect too. Even if you are using vegetables that you can add whichever vegetable you like.
I used the instant pot to make this but you can use a stovetop too and it is totally up to you. Make the stew base by adding to mini processor because it gives it a lovelier color then blending but still if you want to blend add 1/4 cup of water to blend. Add 3 cloves of garlic, 1 small piece of ginger, 1 onion or shallot peeled and chopped, 1 habenero or scotch bonnet with 1 red bell pepper deseeded and chopped, 3 green onions in place of onion or shallot and 1 tomato chopped.
Close the top of mini processor. This one came with my immersion blender which I had to replace. My old one smoked and I imediately unplugged and threw that away and got a new one from Amazon. This one is great I have to say and blended and it made a nice puré without me having to add water and I pulsed it until it was blended. This gets set to the side while I make my single use only Curry Powder. This Is absolutely delish and makes me hungier when I make my own masala which means spice blend. Add 1 pinch each of black and white peppercorns and grind in to a coarse powder. I deglazed the inner lining with my stew base then added my curry powder before I ground my white and black peppercorns with 1 pinch of crayfish then I added this and turned the instant pot on to sauté. Add 4 cups of water, 1 bay leaf, 1 oz of red palm oil, leave it veg or plain or just add cooked meat and use stock in place of water, 2 tsps of either bullion powder or 1 bullion cube crushed, 1 pinch each of red chili powder, thyme, paprika, grated nutmeg equal to a pinch.
For the meat add 1 lb of either beef, lamb, goat, veal, chicken or turkey with 1/2 gallon or 2 quarts of water. pressure cook for 20 minutes. For fish of any type add 1 capful of lemon juice to kill the smell. Sprinkle with bullion powder on both sides and inside after scoring if using whole fish. If uncleaned clean first by removing scales gills and innards.
Fry the fish on stovetop by adding 1 oz of corn, canola, peanut or vegetable oil in a wok or place the fish in parchment paper lined baking dish for instant pot and broil for 15 minutes, bake for 20 minutes or roast for 15 minutes at 400F.
Add 3 dashes of maggi or knorr aroma, 1 to 2 cups of fonio, 1 dab of tomato paste. You can use any protien you may have on hand like any type of zabiha halal meat and that goes for the zabiha halal lunchmeat and corned beef in a can if you want to use. Make sure it has the halal symbal.
