Cholay Batura

Actually I have done a cholay recipe here on this blog and I will link it here to the left here>> Cholay Masala. This will go with the baturas and we will deal only with the baturas which goes with this cholay. Cholay means chickpeas in Urdu. You will need either a hot wok or cast iron skillet on high heat with 1/4 cup of either corn, canola or vegetable oil to make very hot. In a mixing bowl add 1/2 cup of all puropse unbleached flour, 1/4 cup of sooji, 3 pinches each of yeast and baking powder. 1 pinch each of pink salt and turbinano sugar. Mix with hands and add 3 tbs of yogurt and 1/4 cup of room temp water to make a dough a little at a time until it becomes a nice smooth dough. Add 4 tbs of oil on the dough and knead for. 3 minutes. Set aside in a bowl that is covered by its lid or plrastic wrap for 40 minutes,

Knead the dough again and this time break off this dough in to pieces and they should be golfball size. Roll each one in your hand and take one out and cover the bowl each time after you take a piece of this dough out and dredge it in to some all purpose unbleached flour and roll it out like a flat circle almost like you are making chapati. Drop the raw butra dough in to the hot oil either in the wok or cast iron skillet. Let it puff up and get golen on one side and flip and let brown on the other side as well. Place it on paper towel lined plate. Repeat until all of the dough is used up and serve with choly. The link is posted above. ^^^^^^ Look up by scrolling up for details. Also serve with either chai, lassi, kawa or even sherbat.
