Bheja Fry Fried Brains

Hey folks this a real crowd pleaser in my house except for my daughters they do not eat this, It is mostly Mr. Riaz, my eldest brother in law and myself that eats this and if done properly it really tastes like scrambled eggs. I looked at an older post just now and realized that I have done one quite similar but ok this one is going to be different. I did not know this picture exsisted until I looked it up on facebook on my page.

What you need is a pot full of water and add 1 kg or lb of brain to it to boil on high heat with 1 pinch of turmeric powder added. After it turns white and opauqe drain it in to a seive and place this in a bowl to collect therest of the liquid which gets discarded. While doing this make your Garam Masala and set aside too. Now chop 1 green chili, 1 onion or shallot or 3 green onions, 3 cloves of garlic smashed and minced, 1 small piece of ginger minced, 1 oz of olive oil or sunflower oil, to this add 1 tsp of either coconut oil or mustard oil. Add the onion, shallot or green onions if using and cook until caramelized and add the ginger, garlic, chili, the garam masala, 1 pinch each of pink salt, paprika, turmeric powder. again by using the mortar and pestle add 1 pinch each of coriander seeds and black peppercorns and grind and add to the masala mix. Add the brain that has been clean and drained. and fry very well. In a small bowl add 2 tbs of plain desi yogurt, 1 pinch of cornstarch and 1/4 cup of water and mix in to a lump free slurry and add this to the brain itself. Cook this down until it is semi dry. This may take as little as 5 minutes to fry and when done shut heat off and garnish with either 1 pinch of mint or cilantro. I forgot they can be lamb, goat, veal or even cow brains.
