Mirch Ki Salan

Actually this takes a lot of prepping as part of this recipe. This is taken from an archive post of mine that I am going to now tell you about. You will need larger peppers that are pretty mild or shall I say sweet. You will need 4 peppers slit and the seeds removed. They can be bell pepper strips because they are big. Banana peppers cubenelle peppers or pablanos can be used whole but they must be slit and deseeded.

This recipe is for stovetop only and you can do it in a wok on high heat but first add 1 handful of either almonds, cashews or peanuts and dry roast them. These you add to mini processor. Add 3 pinches of either sesame seeds or khas khas which means poppy seeds. Take them and put them in a mini processor. To this you add 1 onion or shallot. 2 cloves of garlic, 1 small piece of turmeric root, 1 small piece of ginger. Add 1/4 cup of water to make it a paste.

In a mortar and pestle grind in to a coarse powder 1 pinch each of black peppercorns and coriander seeds, set all of these aside. And make the wok hot again and add either corn, canola, vegetable. peanut or olive oil. Let it get hot a little then add 1 pinch each of hing, cumin seeds, black cumin seeds, shai zeera meaning caraway seeds and mustard seeds. Let them crackle then add 3 curry leaves.

Now add your peppers to the masala and cook them until they are like roasted. Then you add the contents of the mortar and pestle, mini processor, 1 pinch of tamarind, 1 cup of water then lower the heat to low and cover to cook for 15 minutes. Serve this yummy mirch salan with your choice of either millet rice or naan.
