Aloo Murghi (Chicken with Potatoes)
Actually this is a brand new original recipe by me, yours truely. Below the featured image you will see the same picture again on the left is the same picture of my aloo murghi and the masala I made which is on the left. Ok there is an aloo gosht recipe with chicken being the protien option and if that is what you want then go to that post please.
In Urdu aloo means potato, gosht means meat and murghi means chicken and this one is about chicken only. As the Starkist tuna commercial would say is saying to Charlie Tuna: ” Sorry Charlie, Starkist only wants tuna with good taste.” After watching this commerical when I was a kid had me cracking up. But this isn’t about anything else except for CHICKEN.
First to make the masala you will need to add to mortar and pestle ! small piece of fresh turmeric if you are using. along with 1 small piece of ginger, 1 pinch each of mustard seeds. khas khas which means poppy seeds, fenugreek seeds, black cumin seeds, shai zeera which means caraway seeds, cumin seeds, black peppercorns, coriander seeds, 3 kabab chinis meaning false cubeb berries, 1 whole dried red chili or Kashmiri chili, 1 clove, 1 broken piece of cinnamon stick and grind in to a coarse powder. Set this aside.
There are Three ways this can be done. One being stovetop on low heat by adding 1 oz of either corn, olive, vegetable or canola oil. Add 2 tbs of butter ghee, coconut oil or mustard oil. Wash and chop 1 onion or shallot and add to let brown.
Smash, peel, wash and mince 3 cloves of garlic and stir in the contents of the mortar and pestle. I used the turmeric root in here but if you don’t want to do that that is ok too. Here you can add 1 pinch each of turmeric powder if fresh turmeric root is not in use, paprika and red chili powder are also added. Wash and chop 1 green chili then stir in to the spicy mixture. Add 1 tomato that has been washed and chopped to and make sure the heat is on high then after adding the tomato reduce to low heat.
Add 1 pinch of either sea salt, pink salt kosher salt or bullion powder. You also can add 1 bullion cube in place the salt if you wish. Add 3 dashes of maggi or knorr aroma. Add 1 pinch of either kassori methi leaves. cilantro or mint, stir and add 1 kg or 1 lb of chicken and 4 small potatoes or 2 large potatoes scrubbed and quartered. I don’t peel my potatoes and but you can if you want to. Add 2 cups of water, cover and let cook on low heat on stovetop for 1 hour.
The second an third are both done in an instant pot starting by adding the oil and turning on the instant pot on saute function on high. Continue doing this like you did for the stovetop method then when the tomato is at a mushy pulp and turns to liquid then add the che chicken and coat it in the masala mixture.Make sure you add water and it is the exact same way as stovetop method and press cancel.
Follow by turning on to slow cook by using the glass lid for instant pot for 2 1/2 hours or 20 minutes on pressure cook. This depends on how much time you have to spend and the instant pot will not heat up your kitchen either.
Serve this with a crisp green salad, lassi, naan and achar. If you want the recipe for my aloo gosht I mentioned earlier I will leave the link here but please do not mix these too recipes up. Aloo Gosht is what you will compare this recipe too but please do as I recomend.
