Turkey Soup

I really adore this soup. Turkey soup is amazing and tasty and you do not need the whole bird or even leftover turkey carcas for this one. I would not recomend a left over turkey carcas from the holidays at all. The best bet is use fresh turkey pieces. If you can get the drumstick or the wings then this is perfect. Since the bird is so big all you need is 1 turkey drumstick or a wing. If you go to a live poultry place then you can have this bird cut in to 4 equal quadrants. You must have it on the bone and with the skin on the turkey.
I used to make this a lot when I was in my 20s whenever I can get my hands on some fresh turkey parts with only the bare minimum. Now I have added extra stuff to it to embelish my original recipe. Please do not ask because it is so long that I forgot what I put in there. So this is the new and improved turkey soup and I hope you bare with me to let me tell you the rest of the ingredients because it is so yummy.
I put the turkey leg I had in the instant pot. It looked like it was at an angle when I put the leg in but it was alright later after it was cooked. Add 4 liters or 1 gallon of water, 1/2 cup of mixed veggies, 1/4 cup of chopped celery, 1 onion or shallot, 3 cloves of garlic peeled washed and chopped.
Season with either 1 pinch of plain sea salt, vegtea seasoning, seasoned salt, kosher salt or pink salt. Add 1 pinch of peppercorns to mortar and pestle to grind. Add 2 bay leaves, 1 pinch each of parsley, sage, lemon pepper, savory, marjarom, tarragon, chervil, lovage, thyme, rosemary. Stir and add 3 dashes of either white vinegar, apple cider vinegar, balsamic vinegar, wine vinegar, malt vinegar or tarragon infused vinegar, 3 dashes of Worchestershire sauce.
Stir and place the tempered glass lid that goes on the instant pot. Sadly this lid does not come with the cooker. This one I had to buy seperate and you can find them on Amazon, Target and Khols. Select slow cook on high and make sure you have the condensation collector on in the back. After selecting slow cook then make sure the time is for 4 hours. This develops a very nice tasty broth but if you are in a rush then place the pressure cook lid on and select pressure cook on high for 30 minutes with the cooker on sealing. While that is cooking then take 1/4 cup of short grain rice and rinse it until there is no starchy water left. You can use the same amount of egg noodles if you wish instead if you wish.
However when the time is up and beeps, for slow cook method remove the lid and add the washed rice or the egg noodles and stir. Repeat for another 4 hours. For pressure cook method, don’t forget to place the steam diverter on the vent of the pressure cook lid and press the quick realease button. Add either rice or noodles and place the pressure cook lid on and select 10 minutes and this will cook either the rice or the noodles in this delicous broth. Also you have lots of little turkey pieces that came right off the bone.
For pressure cook method after the instant pot beeps and shuts off, place the steam diverter over the instant pot’s vent and just let it release natrually. For slow cook method open the lid and stir and place the lid back on the cooker and let it sit for a few minutes then unplug the cooker because you are done. Enjoy this delicious soup with a sandwich or a salad.
